Last month Slideluck founder Casey Kelbaugh took a trip to the southern hemisphere. While he was there he curated an evening in Sydney to introduce the idea of Slideluck (coming to Sydney in 2014?). The Aussie’s have a tradition of much like the American potluck called Bring a Dish, so they took to the food portion of the evening quite well. Casey managed to have a few participants send in their recipes, like this delicious Zucchini Frittata from Sooz Burt.
Ingredients
1 tray of zucchini (that’s how my veggie shop sells them, but I guess there are about 6 zucchini) – grated
3 fat cloves of garlic – finely chopped (or however much garlic you like!)
10 eggs – beaten
Goats/feta cheese – crumbled
Parmesan/pecorino cheese – grated
Olive oil
Freshly ground pepper and salt beaten in with eggs
Method
Pre-heat oven to about 180C
Heat olive oil in saucepan and stir fry garlic till golden
Once garlic is cooked add grated zuccini to saucepan – you can turn off heat once garlic cooked – and mix well
Grease a baking tray/dish
Add the grated zuccini evenly into the tray and pour eggs over
Add the goats/feta cheese on top, as well as the parmesan/pecorino
Cook for about 30-35 mins
There are lot of variations on the theme, for example you could add cooked bacon to the above! Or whatever else you fancy.
